Ingredients:

  • 4 medium zucchini
  • 1 1/2 tbsp olive oil, divided
  • 1/2 tsp Italian seasoning
  • 1 1/2 tsp salt, divided
  • 1/2 tsp ground black pepper, divided
  • 1 lb ground beef
  • 1 lb ground pork
  • 3/4 cup minced yellow onion
  • 1/4 cup finely chopped parsley
  • 3 garlic cloves, minced
  • 1/4 cup chopped oil-packed sun-dried tomatoes
  • 1 egg
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella

Directions:

Step 1

To start, preheat your oven to 375 degrees F. Next, prep the zucchini by cutting off both ends, then slicing them in half lengthwise. After this, remove the cores of each zucchini, brush the insides with 1 tbsp olive oil, then season with Italian seasoning, salt, and ground black pepper. Place them in a greased baking pan and set aside.

Step 2

In a large bowl, combine the ground beef and pork along with the diced onions, parsley, minced garlic, chopped tomatoes, beaten egg, and season with salt and ground black pepper. Mix them together, then form them into 32 balls, approximately 1 1/2″ in diameter. After this, put four meatballs in each zucchini. Now, place the pan in the preheated oven and bake for 20 minutes. Once done, remove them from the oven, and top each zucchini boat with marinara sauce and a layer of shredded cheese. Place them back in the oven and bake for another 15 minutes or until the cheese melts. Serve and enjoy!
