This savory and smokey black bean soup is one of my favorite soups and this is also my go-to soup recipe whenever I need to prepare something quick and easy. My go-to recipe is this one by Sunny Side Suppers on YouTube, what I love about this one is it has the perfect balance of flavors and the right amount of spiciness, but if you don’t want some kick in your soup, then you can skip adding chili powder.

You can serve this soup as is or on the side of any of your favorite dishes, and you can also enjoy this in cold weather, or whenever you want. You can also add any veggies that you want, and if you have some leftovers on your fridge, then you can also use them so you can save money. Step 1
Place a pot or Dutch oven on a stove over medium-high heat, then add the olive oil, and heat it before adding in the onion, carrots, and celery. Give them a good stir and saute them for about 5 minutes or until softened, then add the garlic, and cook them for an additional 1 minute while stirring consistently.
Step 2
Season them with chili powder, cumin, smoked paprika, salt, and pepper, then stir until well coated, and add in the 4 cups of broth, corn, crushed tomatoes, and half of the beans. Bring the mixture to a boil, then reduce the heat to medium-low, and let it simmer for about 10 minutes.
Step 3
In a blender or food processor, add the remaining half of the beans along with the rest of the broth, then blend them until smooth, and pour them into the soup. Give them a good stir to combine, then simmer for an additional 15 minutes, and adjust the seasonings to taste by adding more salt and pepper as needed. Serve and enjoy!
