Slice the white and dark chocolate into small pieces, then place them into two separate bowls.
Add 6.8 oz of whipping cream in a small saucepan over medium heat. Let it come to a simmer. Pour the hot cream directly over the chopped white and dark chocolates into two equal amounts. Let it sit for about 5 minutes. After 5 minutes, stir both chocolate until completely melted.
Once melted and smooth, allow it to cool for about 5 to 10 minutes.
In a large bowl, whisk the remaining whipping cream until soft peaks form. Transfer half of the whipped cream to a separate bowl.
Add the cooled melted white chocolate to the whipped cream in portions, whisking until all the chocolate is mixed and firm peaks form. Repeat the same process with the remaining whipped cream and the cooled melted dark chocolate.
Spoon the white and dark chocolate mousse into a small serving dish in alternating layers, or you can put them into 2 piping bags and then squeeze them into the serving dish. Serve them immediately or refrigerate for 3 to 4 hours before serving.
Decorate with chocolate sprinkles or toppings and enjoy!
