Sauce:
Thinly slice the ribeye steak and transfer them to a mixing bowl. To that, add 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/4 tsp ground black pepper, one large egg, 1 tbsp soy sauce, 1 tbsp Shaoxing cooking wine, chopped scallion whites, 1 tsp baking soda, and 1/3 cup cornstarch. Mix well together, then marinate for 30 minutes. In the meantime, make the sauce.
In a mixing jug, combine 1/2 cup beef broth, 1 tbsp soy sauce, 1 tbsp Shaoxing cooking wine, 1 1/2 tsp sugar, 2 tbsp hoisin sauce, and 2 tsp dark soy sauce. Mix well, then stir in 2 tbsp cornstarch and set aside. Now, add enough cooking oil into a large pan, then cook the marinated beef in batches until golden brown. Once done frying, remove most of the oil from the pan, leaving about a tablespoon, then pour the sauce.
Stir it over medium heat, allowing it to thicken. Next, add the cooked beef and toss them to coat them with the sauce. Turn off the heat, then garnish with chopped green onions. Serve and enjoy.
