Start by preheating the oven to 350F.
Get a large mixing bowl, then add the butter and brown sugar. Mix until well combined.
Whisk in the molasses, vanilla, and eggs.
Sift in the flour, baking soda, salt, and cinnamon directly into the mixture. Mix until just combined.
Add the oats to the mixture and mix until well incorporated. Do not overmix the batter otherwise, you will get tough cookies.
Scoop out the cookies using an ice cream scoop (about 2 tablespoons) and place onto a baking sheet lined with parchment paper. Make sure to leave 3 inches between each one.
Place inside the oven and bake for about 7 to 9 minutes. Once done baking, the cookies will still be very soft. Let them cool completely.
While waiting for the cookies to cool, make the filling by beating the butter, milk, vanilla, and marshmallow fluff.
Put a spoonful of the filling on one cooled cookie and sandwich with another. Continue with the other cookies. Serve and enjoy!
