Ingredients:

  • 2 3/4 cups old-fashioned rolled oats
  • 1 1/2 tbsp chia seeds (optional)
  • 1 tsp baking powder
  • 1/4 tsp fine salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/3 cup maple syrup or honey
  • 1 ripe banana, mashed
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup melted unsalted butter (or coconut oil)
  • 2 tsp pure vanilla extract
  • 1/4 cup almonds, sliced or chopped
  • 1 1/2 cups frozen blueberries (do not thaw)

Directions:

Step 1

Preheat your oven to 375 degrees F and grease a 9 x 9 (or 8 x 8) baking dish with a nonstick cooking spray. Set it aside. Next, in a large mixing bowl, combine 2 3/4 cups of old-fashioned rolled oats, 1/4 cup sliced almonds, 1 1/2 tbsp chia seeds, 1/2 tsp ground cinnamon, 1/4 tsp ground nutmeg, 1 tsp baking powder, 1/4 tsp fine salt, 2 large eggs, one smashed ripe banana, 1/4 cup melted unsalted butter, 2 tsp pure vanilla extract, 1/3 cup maple syrup, 1 1/2 cups milk, and 1 1/2 cups frozen blueberries. Mix everything together to combine.

Step 2

Once done, transfer the mixture to the prepared baking dish and spread it evenly. Sprinkle some more sliced almonds and blueberries over, then place the baking dish in the preheated oven at 375 degrees F, and bake for 30 to 35 minutes. After baking, let it cool for ten minutes, then slice into squares. Serve with some whipped topping or yogurt.
