When I first saw a pumpkin spice SPAM flavor in the store, I was genuinely curious as to how it tasted like but had never thought of actually giving it a try until I found this video tutorial by TheWolfePit on YouTube. It looked interesting and delicious, and it looked so easy and quick to prepare, too. So I finally gave in and tried making it at home.

Luckily, the taste did not disappoint and it was really yummy, I might even make it more often. Plus, this recipe can yield 2 cheesecakes, enough to share with your family. Step 1
Cut the SPAM into small cubes, then place a skillet on a stove over medium-high heat, and cook the SPAM cubes. Cook them for about 5 minutes or until nice and brown, then add some brown sugar, and cook for 3 more minutes while stirring continuously until caramelized.
Step 2
Turn off the heat, then transfer the candied SPAM to a plate and set it aside for later. In a large mixing bowl, add the cream cheese and brown sugar, then beat them until thoroughly mixed and smooth, add the pumpkin pie filling, and continue to mix until combined.

Step 3
Add the flour and 1 egg, then beat until incorporated, add the 2nd egg along with the vanilla extract, and continue to mix until combined. Add the final egg along with the pumpkin spice extract, then mix until incorporated.
Step 4
Add the candied SPAM to the batter, then fold until evenly combined, and transfer them evenly into 2 pie crusts. Place them in a preheated oven at 350°F, then allow them to bake for about 2 hours, and then allow them to cool down before transferring them to the refrigerator to cool completely until ready to serve.
