I was thinking of a dessert to serve this holiday season that’s easy to make. I thought of serving pumpkin pie but I realized that I want something a bit bite-sized and light that can go with coffee. Everyone likes pumpkin pie for its combination of flavor and texture so I looked for other recipes that could satisfy my needs. I was lucky to have stumbled on this pumpkin pie cupcake recipe from Chelsweets on Youtube. It’s fun and easy. And most of all it takes out the creative in me when I design the frostings on top of the cupcakes.
It’s an easy recipe. You just have to make sure you have already baked pumpkin pie cupcakes. First, you mix 1 cup of heavy cream and a package of instant vanilla pudding and whisk until smooth. Then add in 1 cup of pumpkin puree, pumpkin spice, and cinnamon. If you like extra color, you can opt to add orange gel coloring in the mixture. Whisk the mixture until smooth.
Once you’re done preparing the mixture, you can carve the center of each cupcake then fill it in with your pumpkin filling. Then you can go on unleash your creative side with design frosting on top of each cupcake. Sometimes, it’s fun to use stripes over the top and add in some curls on the side. The tutorial shows that you can experiment with different shapes for the frostings as long as they really look good and enticing enough for someone to pick the cupcake and take a bite. I highly recommend this recipe. It’s fun, easy, and quick to make. Just an aside, these cupcakes can be really good decorations by the side of your dinner table while everyone finishes the main dish.
