Start by seasoning the chicken on all sides with all-purpose seasoning with a little bit of smoked paprika and cayenne, then prepare the vegetables.
Place a skillet over medium heat and add avocado oil. Once hot, add the chicken and sear for 1 to 2 minutes per side until golden brown. Transfer the chicken to a plate.
In the same skillet, add butter and the prepared vegetables. Cook them until they begin to get tender then add the chicken base. Next, add the long-grain white rice and mix well. Let the rice toast for about 2 to 3 minutes, then deglaze the bottom of the skillet with white wine and chicken stock. Bring it to a simmer.
Once simmering, add the chicken broth. Bring it back to a simmer, then add the cooked chicken and thyme. Place the lid and reduce the heat to a gentle simmer for about 20 to 25 minutes or until the chicken and rice are done. Season it to taste then garnish with chopped parsley before serving. Enjoy!
