Ingredients:

  • 2 tbsp softened butter
  • 30 – 32 oz shredded hashbrowns
  • 10.5 oz can condensed cream of chicken
  • 8 oz sour cream
  • 1 tbsp dried chives
  • 1/2 tsp seasoned salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground black pepper
  • 8 oz mild cheddar cheese, shredded
  • 1 lb lean ground beef
  • 10 oz can Rotel diced green chilies and tomato
  • 1 tbsp dried dehydrated onion
  • 2 tsp light chili powder
  • 1 tsp seasoned salt
  • 1 tsp granulated garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin

Directions:

Step 1

Heat a pan with some olive oil. Once it’s heated through, add the ground beef and break it apart. Season with 1/2 tsp seasoned salt, 1 tbsp dried dehydrated onion, 1 tsp garlic powder, 2 tsp chili powder, 1/2 tsp smoked paprika, 1/2 tsp ground cumin, 1/2 tsp ground black pepper. Mix and cook until the meat browns. After this, add one can of Rotel diced green chilies and tomato. Stir together until combined. Once the meat is cooked through, turn off the heat and set it aside. Next, add the shredded hashbrown to a large bowl followed by 8 oz sour cream, one can of condensed cream chicken, and a bit of the shredded cheese. Season with dried chives, smoked paprika, onion powder, ground black pepper, and seasoned salt. Mix well.

Step 2

Next, transfer the hashbrown mixture into the buttered casserole dish, then layer the ground beef mixture over. Finally, top everything with the remaining shredded cheese. Place in a preheated oven at 375 degrees F and bake for 45 to 50 minutes uncovered. After baking, remove it from the oven, and let it set for 35 to 45 minutes. Garnish it with some freshly chopped parsley.
