Ingredients:

  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 pound strawberries sliced
  • 7.2 ounces graham crackers 1.5 sleeves

Directions:

First, in a stand mixer or hand-held mixer, beat the cream, powdered sugar, and vanilla until stiff peaks form. Then, place a thin layer of cream at the bottom of a square pan. Next, add a single layer of graham crackers.

Overall, this would be a refreshing cake during any time of the year, but I think it’s perfect for the summer because of the fresh fruit. It’s light and made with simple ingredients. Plus it’s a pretty dessert if you make this in a clear glass baking dish. I feel like I could eat a lot of this dessert without feeling super heavy compared to a thick filling cake. Also, you can replicate this dessert and make it your own with other fruits too.
