Ingredients:

  • 4 medium russet potatoes (scrubbed clean)
  • 1/4 cup extra virgin olive oil
  • 2 tsp whole ground (or plain) mustard
  • 1 large grated garlic clove
  • 1/3 cup freshly grated parmesan cheese
  • 1/2 tsp garlic powder
  • salt, to taste
  • ground black pepper, to taste
  • 1 1/2 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp crushed rosemary
  • 1 tsp crushed thyme leaves

Ingredients:

Step 1

Preheat your oven to 400 degrees F. Next, combine 1/3 cup freshly grated parmesan cheese, 1 tsp onion powder, 1/2 tsp garlic powder, 1 1/2 tsp paprika, 1/2 tsp crushed rosemary, 1 tsp crushed thyme leaves, 2 tsp whole ground (or plain) mustard, 1 large grated garlic clove, and 1/4 cup extra virgin olive oil. Mix together until well combined and set aside. Moving on with the potatoes, cut the ends off, then slice them through a mandolin. Once done, add the potatoes to the seasoning mixture and toss until all of them are well-coated. Add salt and ground black pepper to taste.

Step 2

Now, grease your muffin pan with nonstick cooking spray, then start stacking the potato on each cup. After this, cover the muffin pan with a piece of aluminum foil, then place it in the center rack of the preheated oven. Bake for 30 minutes, then remove the foil and continue baking for another 25 minutes. Garnish with more grated parmesan cheese, chopped green onions, and sour cream. Serve and enjoy!
