I love mashed potatoes, and that’s why when I discovered this recipe, I knew I had to try it. They’re creamy, tasty, and so soft, that I can probably have them every day. Learn how to make them by watching the video below for the step by step instructions.

Ingredients:

  • 2 lb Yukon gold potatoes, peeled and chopped
  • 1/4 cup unsalted butter, melted and divided
  • 2 tbsp heavy cream
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp grated nutmeg
  • 3 egg yolks
  • freshly chopped parsley, for garnish

Directions:

Step 1

Preheat your oven to 425 degrees F and line a baking sheet with parchment paper. Set aside. Next, peel the potatoes and chop them into equal-sized pieces. After this, transfer them to a large pot and cover them with cold water. Place the pot over high heat and let it come to a boil (about 15 to 20 minutes). After boiling, drain the potatoes in a colander, then transfer them back into the pot. Put them over low heat for a minute to dry them nicely.

Step 2

Now, pass the potatoes through a fine mesh sieve, and use the back of a spoon to press the potatoes through to a bowl. Use a spatula to clean off the bottom of the sieve. To that, add 2 tbsp melted butter, 2 tbsp heavy cream, 1 tsp salt, 1/4 tsp ground black pepper, and 1/4 tsp grated nutmeg. Mix together until well combined. After this, stir in 3 egg yolks one at a time.

Step 3

Now, add the mashed potato to a piping bag, and pipe 12 mounds that are 2″ high and 2 1/2″ wide into the prepared baking sheet. Pop them into the fridge for 20 minutes. After chilling, remove them from the fridge and brush some melted butter to the tops of each mound. Bake them in the preheated oven for 20 minutes or until the edges turn golden brown. Garnish with some freshly chopped parsley and serve.
