You can never go wrong with this southern-style rotisserie chicken salad by Collard Valley Cooks. A classic recipe like this is always a crowd favorite. Everyone always asks me to prepare this whenever we have a gathering at home. It is super easy and quick to make as it uses rotisserie chicken. You’ll definitely save a lot of time with this recipe. You can also cook your own chicken if that is what you prefer.

Making this homemade chicken salad will only take you a few minutes. It is good as is but I love eating it with freshly baked croissants. The buttery and flaky is perfect with creamy chicken salad. Just slice it in half, add some lettuce, spread the chicken salad on the bottom half, and top it with the other half. You can serve it with caramelized carrots, potato salad, refrigerator pickles, or french fries.

In a large mixing bowl, add 1/2 cup of mayonnaise, minced onion, chopped dill, pepper, and celery. Set it aside while preparing the chicken.
Chop the rotisserie chicken into 3/4-inch to 1-inch wide pieces. Break some of the pieces using your hands.
Add the chopped chicken to the same bowl and mix until well combined. Using your clean hands (you can also wear a glove), bring all the ingredients together. Make a taste test and adjust seasonings if needed. Serve with croissants.
