This recipe is made from scratch, but it’s easy to put together as you’ll only need to process the ingredients in a food processor. Ingredients:

  • 6 bone-in skin-on chicken thighs
  • salt and ground black pepper
  • 2 tbsp vegetable oil
  • 1 green onion, whole
  • 1/2 yellow onion
  • 3 cloves of garlic
  • 1 tbsp fresh ginger
  • juice of 1 lime
  • 1 jalapeno pepper, deseeded
  • 1/3 cup soy sauce
  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 2 tsp ground thyme
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice

Directions:

Step 1

To start, season the chicken thighs with salt and ground black pepper to taste. Heat 2 tbsp vegetable oil in a large pan over medium-high heat, then add the chicken thigh. Brown each side for three to four minutes, then transfer them to the slow cooker. In a food processor, add the green onion, ginger, jalapeno, garlic, onion, 1/3 cup soy sauce, 1/4 cup ketchup, 1 tbsp brown sugar, juice of 1 lime, 2 tsp ground thyme, 1/2 tsp ground cloves, 1/2 tsp ground nutmeg, and 1/2 tsp ground allspice. Process until smooth texture.

Step 2

Pour the sauce into the chicken thighs, then cover the slow cooker with its lid. Set it on slow and cook for eight hours or on high for four hours. After the chicken is cooked, remove them from the slow cooker and transfer them to a serving plate. Pour all the juices over the thighs and serve them with some chopped parsley or cilantro.
