Ingredients:

  • 2 pounds of green beans
  • 1 pound of smoked turkey necks
  • 2 strips of bacon, sliced
  • 1 pound of small red potatoes, chopped
  • 1 cup of onion, coarsely chopped
  • ½ cup of crushed tomatoes
  • 2 tsp of minced garlic
  • 1 quart of water
  • 1 quart of chicken broth
  • 2 tbsp of butter
  • 1 tbsp of vegetable oil
  • ¼ cup of apple cider vinegar
  • 2 cubes of chicken bouillon
  • ¼ cup of sugar
  • 1 tbsp of seasoning salt
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • ½ tsp of black pepper
  • 1/8 tsp of cayenne pepper, optional

Directions:

Step 1

Wash the turkey necks well, then fill a pot with water, and add the turkey necks. Boil the turnkey necks over medium-high heat to high heat for an hour or until nice and tender. While the turkey necks are cooking, snap the beans in half, then soak them in salt water mixture, and chop the onions and bacon into smaller pieces. Place a pan over medium-high heat, then add the oil, and cook the bacon before adding the onions. Give them a good toss, then fry them for about 5 minutes stirring occasionally, remove them, and set them aside.

Next, chop the potatoes, then let them sit in a bowl of water, and set them aside. Once the turkey necks are ready, add the green beans, potatoes, diced tomatoes, butter, cooked bacon and onion, and minced garlic, then season them with seasoning salt, garlic powder, onion powder, black pepper, sugar, apple cider vinegar, and chicken broth, and let them cook for about 1 to 2 hours or until the green beans are cooked through.
