The best thing about this recipe is that it doesn’t require a mixer or chilling like other cookie recipes. It’s super easy to make, and most of the ingredients you need are basic pantry staples. Even if you have little to no baking experience, the cookies will still turn out perfect. They are soft and chewy, just as you like your cookies.

Start by toasting the pecans. Preheat your oven to 350F and line a cookie sheet with parchment paper.
Add the pecan halves to the prepared cookie sheet, then spread evenly. Bake at 350F for 3 to 5 minutes. Once done, remove it from the oven, but do not turn it off. Set it aside while preparing the cookie dough.
Make the cookie dough. In a large bowl, combine melted butter and sugars. Stir until well combined. Add the eggs, egg yolk, and vanilla extract. Mix well.
Get a separate medium-sized bowl. Add flour, cornstarch, baking soda, baking powder, and salt.
Gradually add the flour mixture to the wet mixture, mixing until completely combined.
Coarsely chop the roasted pecans, then add into the dough followed by the toffee bits.
Line a cookie sheet with parchment paper. Get a heaping tablespoon of the cookie dough, then drop it into the prepared cookie sheet. Repeat with the remaining cookie dough. Space them at least 2″ apart.
Place inside the 350F oven and bake for 10 to 12 minutes. When done baking, they should still look soft/slightly underdone in the centers. Sprinkle sea salt on top while the cookies are still warm.
Allow them to cool completely on the baking sheet.
