This super soft and fluffy no-knead banana bun by Helly’s Simple Recipe is my absolute favorite. It does not contain any sugar – the natural sweetness from the banana is what makes this bread sweet and delicious. For this recipe, you only need 7 simple ingredients that can easily be found in any grocery store, or maybe you already have them in your pantry. Ingredients:

  • 2 super-ripe bananas
  • 1 teaspoon of active dry yeast
  • 1/2 teaspoon of salt
  • 1 egg
  • 2 cups and 1/3 cup of bread flour or all-purpose flour
  • 2 tablespoons of unsalted butter
  • 1/2 cup of raisins (optional)

Instructions:

Step 1:

Place the ripe bananas in a bowl and mash with a fork.

Step 2:

Add 1 egg and whisk until well incorporated. Next, add dry yeast and mix.

Step 3:

Place the unsalted butter in a small microwavable bowl and microwave for 20 seconds. Add it to the mixture with 1/2 cup of raisins. Mix until well combined.

Step 4:

Add salt and flour(gradually) and mix until well combined until it becomes sticky. Cover it with a plate or plastic wrap for 1 and 1/2 hours or until it doubles in size.

Step 5:

Fold the dough. Sprinkle some flour into your work surface and transfer the dough. Sprinkle more flour on top, fold it with a dough cutter then form it into a ball. Flatten it with your hands, then cut it into 9 equal sizes. Get one of the pieces, fold the sides to the middle, and form into a ball. Repeat for the remaining dough.

Step 6:

Place the dough balls in an 8×8 baking pan with some spaces in between. Cover it and let it double in size for about 45 minutes.

Step 7:

Sift dry flour on top of the dough balls.

Step 8:

Place inside the oven and bake at 375 degrees Fahrenheit for about 15 to 20 minutes.
