To Serve:
Heat 2 tbsp olive oil in a large pan over high heat. Next, season both sides of your pork with 1/4 tsp salt and 1/4 tsp ground black pepper. Place the seasoned pork in the heated pan and fry each side for two minutes or until brown. Once done, transfer them to the slow cooker. Now, add another tablespoon of olive oil to the same pan, turning the heat down to medium, then add the chopped onions. Saute for about five minutes. Next, add the minced garlic, saute for a further minute, then sprinkle 2 tbsp plain all-purpose flour.
Continue stirring to coat the onion with the flour, then gently pour 1 1/2 cups chicken stock while stirring all the time. Now, transfer the mixture to the slow cooker. Add 7 oz sliced mushrooms, 1/2 tbsp tomato paste, 1/2 tbsp white wine vinegar, and 1/4 tsp ground black pepper. Mix, then place the lid on the slow cooker. Set it on high and cook for three to four hours. After this, remove the lid, stir in 1/4 cup double cream, and garnish with 2 tbsp freshly chopped parsley. Serve with some mashed potato and green vegetables.
