Ingredients:

  • 5 lb russet potatoes
  • water to cover potatoes
  • 1/2 cup salted butter
  • 1 & 1/2 cups heavy cream
  • 2 tsp sea salt
  • 1/4 tsp pepper (optional)

Directions:

Step 1

Peel and rinse the potatoes thoroughly. Next, dice them into 1/2 to 1-inch pieces, then add them to the slow cooker. Put enough water just to cover the potatoes but do not overfill the slow cooker to the brim. Put on the lid, set to high, and cook for four hours. After four hours, drain the potatoes, then put them back in the slow cooker. Add 1/2 cup of salted butter. Now, get your handheld mixer and blend them together at medium speed. (Be careful not to scrape the slow cooker.)

Step 2

After blending, add 2 tsp salt and 1 & 1/2 cups of heavy cream. Blend until smooth, then add additional milk or butter if needed. (You can also add more salt or pepper if you like.) Your mashed potatoes are now ready to be served!
