Ingredients:

  • 8 – 10 Roma tomatoes, chop into quarters
  • 3 small onions, chop into quarters
  • 3 red peppers, roughly chopped
  • 2 cloves of garlic
  • olive oil
  • 3 cups of vegetable stock
  • dried basil
  • dried thyme
  • salt and ground black pepper

Directions:

Step 1

Preheat your oven to 400 degrees F. Next, prep and chop the veggies accordingly, then place them in a sheet pan along with the garlic cloves. Drizzle some olive oil all over the veggies and season them with salt and ground black pepper to taste. Now, place the sheet pan into the preheated oven and roast them for one and a half hours. After roasting, transfer the veggies to a large pot. Add 3 cups of vegetable stock, some dried basil, and thyme, then heat the pot for 10 to 12 minutes to incorporate all the ingredients.

Step 2

Once done, blend all the ingredients using an immersion blender right into the pot until the texture is smooth. (Take your time and make sure all the chunks are blended well.) After this, transfer the soup into serving bowls. Enjoy!
