Remember the Television commercial, where Andy Griffith tells us how everything is great when it sits on a Ritz? Well, old Andy is right, there’s nothing more delicious than a Ritz cracker. I just found an excellent recipe for a Ritz cracker chicken casserole by The Country Cook on Youtube, and I knew I had to make it immediately. The steps are so easy to make this fabulous dish, you are really going to love this chicken and Ritz casserole for so many reasons. You only need to get an ordinary rotisserie chicken from the prepared food section of your grocery store. Your favorite roasted chicken is going to be so delicious when it’s shredded, then thrown into a bowl with sour cream, cream of chicken soup, and green onions.

Ingredients:

  • 1 (10.5 ounce) can of condensed cream of chicken soup
  • 1 cup of sour cream
  • 1/2 cup green onions (chopped on small circles)
  • 1 large pre-cooked rotisserie chicken from the supermarket (deboned and shredded, makes about 3 cups)
  • 2 sleeves of Ritz crackers (crushed)
  • 1/2 cup (1 stick) salted butter (melted)

In this wonderful recipe by The Country Cook, you will be taken step by step through the preparation of this recipe. You will first shred the chicken, then add it to the bowl with the sour cream, cream of chicken soup, and green onions.
