Ingredients:

  • 1 heaping cup of fresh raspberries
  • 1 tbsp chia seeds
  • 1 tbsp raw honey (or pure maple syrup)
  • 1 cup dark chocolate chips

Directions:

Step 1

To start, line your sheet pan with parchment paper and set it aside (make sure to make a space in the freezer for it). Next, transfer the raspberries to a bowl and crush them using a fork. After this, stir in 1 tbsp chia seeds and 1 tbsp raw honey. Mix until well combined. Now, spoon the mixture onto the prepared pan, leaving ample space between each piece. Once done, place it in the freezer for an hour, or until they’re very solid.

Step 2

In the meantime, melt 1 cup of dark chocolate chips in the microwave. Once the raspberries are frozen and solid, dip each into the melted chocolate, making sure they’re properly coated, then gently place them back in the prepared pan. Put them in the freezer again for 20 minutes or until the chocolate sets. Serve and enjoy! (You can also place them in a tight-sealed container, and store them in the freezer for up to two months.)
