It takes only 6 ingredients to make, and they would be fun to make for a special someone. The raspberry white chocolate ganache can be used for macrons or filling inside a cake too. I love raspberry and white chocolate together and it would be a perfect sweet treat. Homemade gifts are super thoughtful and special, and this would be a nice addition to other gifts.
Ingredients:
- 1 1/2 cup Dark Compound Chocolate (i.e., Cadbury melts)
- 1/2 cup white chocolate
- 2 tbsp cream
- 1/4 cup raspberries
- 2 tbsp sugar
- 1 1/2 tbsp water
Directions:
First, make the white chocolate ganache by adding the cream to the white chocolate and microwave for 30 seconds. Add the raspberries, sugar, and water to a pot on medium-low heat and keep stirring. Let it simmer so the water can evaporate and the raspberry turns into a paste. This should thicken in about 10 minutes. Gradually add the raspberry to the ganache and mix. Next, once the melted chocolate and raspberry filling has been added to the mold, layer with melted chocolate on top so it seals the truffles together. Use a spatula to smooth it out and a scraper to remove any excess chocolate. Let it sit in the fridge for 10 minutes.
Use any type of mold that you may have such as heart-shaped molds for Valentine’s Day or regular circles. The filling makes it special for these truffles and I think it’s unique because a lot of truffle recipes have just regular chocolate filling. I think it would be nice to add a bit of alcohol inside some of these for an adult treat.
