Chocolate Cups:

  • 14 oz dark chocolate, divided
  • 5 oz fresh (or frozen) raspberries
  • 1/4 cup sugar
  • 1 1/4 cup cold whipping cream
  • raspberry puree*
  • powdered sugar, for topping
  • fresh raspberries, for topping

Directions:

Step 1

Melt 5.5 oz dark chocolate in a double boiler, then remove. Add another 1.5 oz dark chocolate and stir it in until smooth. Next, fill each of the six aluminum cups with a little less than half of the melted chocolate, then rotate to coat the wall with a thick layer of chocolate. Pour the excess chocolate back into the bowl. Once done, scrape the top edges, then place them upside down on a parchment paper-lined baking tray. Refrigerate for at least 30 minutes or until the chocolate hardens. In the meantime, make the raspberry puree. Add 5 oz fresh (or frozen) raspberries in a medium saucepot along with 1/4 cup sugar. Simmer for five to ten minutes, then remove from the stove. Once done, sieve the puree for a smooth texture.

Step 2

Melt 7 oz dark chocolate in a double boiler, then stir in the raspberry puree to combine. Set aside. Add 1 1/4 cups of cold whipping cream in another bowl and whisk until foamy. Fold a third of the whipped cream into the chocolate mixture. After this, fold it into the remaining whipped cream. Now, grab the refrigerated chocolate cups from the fridge and remove them from the aluminum cups. To do this, make a small cut at each mold, then tear them off. Divide the raspberry-chocolate mixture onto each chocolate cup and refrigerate for at least two hours until set. Once done, top them with fresh raspberries and sprinkle some powdered sugar.
