These quick and easy tuna patties by Platin’ It With Wendy are always a hit in any household! They are crispy on the outside and tender on the inside. Ingredients:

  • 3 cans of solid white tuna (4.7 oz each)
  • 3 slices of fresh bread
  • half of a large onion or 1 onion
  • 2 green chilies (roughly chopped)
  • 5 garlic cloves
  • half red pepper (roughly chopped)
  • two tomatoes (deseeded and diced into small pieces)
  • finely chopped cilantro
  • half lemon
  • 1/2 teaspoon of Dijon mustard
  • salt and pepper to taste
  • 6 large eggs (lightly beaten, divided)
  • breadcrumbs
  • vegetable oil

 

Note: you can also use flaky tuna or salmon if you like

Instructions:

Step 1:

Drain all the water from the canned tuna and place them in a bowl. Mash it down using a fork to make it flakier.

Step 2:

Slice the bread into small pieces and place into your food processor. Grind until they turn into crumbs, then put into the same bowl as the tuna. Next, cut the onion into big bits, grind it into your food processor, and add to the bowl. Do the same for the chilies, garlic cloves, and bell pepper.

Step 3:

Add the diced tomatoes and finely chopped cilantro.

Step 4:

Add the juice of the lemon, Dijon mustard, salt, and pepper. Mix ingredients until well combined.

Step 5:

Beat 3 eggs and pour into the mixture. Give it a good mix.

Step 6:

Beat another 3 eggs into a bowl, then spread some breadcrumbs into your chopping board.

Step 7:

Use a trigger-release ice cream scoop to get the uniform size of tuna cakes. Form into a patty, dip into the egg, and coat with breadcrumbs. Repeat for the remaining mixture.

Step 8:

Add vegetable oil to a heated skillet and fry the tuna cakes until golden brown. Flip and fry the other side. Once done, place on a plate lined with a paper towel to remove excess oil.
