Pat the chicken dry using paper towels, then season with salt and pepper.
Melt butter over medium-high in a large skillet with a lid. Then add chicken thighs, skin side down. Cook for 4 to 5 minutes until golden brown. Flip the chicken and cook the other side for 1 minute, then remove and place on a plate.
Brown the drumsticks. Do each side for about 2 minutes each, then remove from the skillet.
Add the mushrooms, onion, bay leaves, and thyme. Cook for 5 minutes until the mushroom is lightly golden.
Add garlic and stir for 30 seconds. Then add flour and cook for 1 minute.
Add wine and chicken stock. Stir and scrape the base of the pot to dissolve the brown residue.
Put the chicken back into the pan with the skin side up.
Once it simmers, adjust the heat to medium-low so it’s bubbling constantly, but not rapidly. Cover the lid and simmer for 10 minutes.
Remove the cover and let it simmer for 20 minutes more. Check if the chicken’s internal temperature is 167 degrees F or slightly higher.
Remove chicken from the plate, then add cream. Stir. Once it simmers, taste the sauce and add more salt if desired.
Return the chicken into the sauce, then remove it from heat. Sprinkle with parsley, then serve.
