Easy Pumpkin Cupcake Ingredients

  • 1 cup of flour
  • 2 teaspoons of pumpkin pie spice
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 cup of pumpkin puree
  • 1/2 cup of melted butter
  • 3/4 cup of brown sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract

For the cream cheese frosting:

  • 1 cup of cream cheese
  • 1/4 cup of butter
  • 1 cup of confectioners’ sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla

How to Make Pumpkin Cupcakes

Step 1:

In a large bowl, add 1 cup of flour, 2 teaspoons of pumpkin pie spice, 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, and 1/2 teaspoon of salt

Step 2:

In a different large bowl, add 1 cup of pumpkin puree, 1/2 cup of melted butter, 3/4 cup of brown sugar, 2 eggs, and 1 teaspoon of vanilla extract. Whisk to combine.

Step 3:

Transfer the wet mixture to the dry mixture. Mix with a spatula until well combined.

Step 4:

Line your cupcake tin with cupcake liners. Using a cookie scoop, scoop the mixture and fill each cupcake liner.

Step 5:

Place inside the oven and bake at 350f for 20 minutes. Once done baking, transfer to a cooling rack to cool completely.

Step 6:

Make the cream cheese frosting. In a bowl, add 1 cup of cream cheese and 1/4 cup of butter. Whisk to combine. Next, add 1 cup of confectioners’ sugar and 1 teaspoon of cinnamon. Whisk until smooth. Lastly, add 1 teaspoon of vanilla and whisk to combine. Transfer to a piping bag. Pipe over the cupcakes, then sprinkle cinnamon on top.
