Ingredients for Chocolate & Caramel Turtle Cheesecake:

Chocolate Ganache

  • ¼ cup of heavy cream
  • 2 oz of chopped chocolate

Crust

  • 1½ cups of graham cracker crumbs
  • ⅓ cup of finely chopped pecans
  • 3 tbsp of light brown sugar, firmly packed
  • 7 tbsp of salted butter, melted

Cheesecake filling

  • 24 oz of full-fat cream cheese, softened
  • ¾ cup of granulated sugar
  • ¼ cup of light brown sugar, firmly packed
  • ½ cup of sour cream
  • ¾ tsp of vanilla extract
  • 3 large eggs, at room temperature, lightly beaten
  • ¼ cup of caramel sauce
  • Chocolate ganache

Topping

  • ⅓ cup of caramel sauce
  • 1 oz of chopped chocolate
  • 2 tbsp of heavy cream
  • ¾ cup of pecans, mix of chopped and halved

How to Make Chocolate & Caramel Turtle Cheesecake:

Step 1

In a heat-proof bowl, add the heavy cream and chocolate, then heat them in the microwave on a high setting at 25-second intervals, and stir them well until completely melted. Set the ganache inside, then let it cool, and proceed to prepare the crust. In a medium-sized bowl, add the graham cracker crumbs, finely chopped pecans, and brown sugar, then mix them until uniform and combined, add the melted butter, and stir them until moistened.

Step 2

Transfer the crust mixture to a 9-inch springform pan, then press it firmly to the bottom and sides, and set it aside for later. In a large mixing bowl, beat together the cream cheese and sugars over medium speed until smooth and creamy, then add the sour cream and vanilla extract, and mix over low speed until combined.

Step 3

Add the lightly beaten egg, then stir over low speed to combine, and incorporate the remaining eggs one at a time the same way. Pour ⅓ of the cheesecake batter into the prepared crust, then drizzle half of the caramel sauce and chocolate ganache, and repeat the layers with the remaining cheesecake batter, caramel sauce, and chocolate ganache with the cheesecake batter at the top or final layer.

Step 4

Place the rack in the center of your open, then put the pan in the rack, and let the cheesecake for about 50 to 55 minutes or until almost set. Once done baking, let it cool until almost room temperature, then transfer it to the refrigerator, and let it chill for at least 6 hours up to overnight. Top with more chocolate ganache, caramel sauce, and pecans, then serve, and enjoy!
