It’s peach time in Texas again and I can just smell the Fredricksburg, Texas peaches all the way in Austin! My favorite liquor of all time is Captain Morgan Rum and luckily, it is not seasonal like our Texas peaches are, so when it is on sale at Spec’s Liquor Store I buy a whole case and put in my root cellar and guard it with my life. So loving peaches as much as I do I nearly went hog wild when I saw this recipe for Peach Cobbler Egg Rolls because it had all the elements of the things I love the most, fresh peaches egg rolls, and Captain Morgan Rum, yum! So I got my ingredients together and made this delicious recipe as fast as I could.

Ingredients:

  • Oil (for frying)
  • 1 Package Of Egg Roll Wrappers
  • Sugar
  • 1 Can Of Peach Pie Filling (or fresh peaches)
  • 2 to 3 Tbsp Captain Morgan Rum
  • Can Of Whipped White Icing (or your favorite homemade)

Directions:

Open your can of peach pie filling (or prepare your fresh peaches) and empty it into a small mixing bowl or saucepan if you are making fresh peaches, cinnamon, next add your Captain Morgan Rum.

Then place your delicious Captain Morgan Rum Peach Sauce Compote into your egg roll wrapper and roll up.
