Cottage fries are the best. I call them the “forgotten fry” because we have home fries, french fries, and steak fries, but poor little cottage fry is often left out. Not to mention, they look gorgeous next to your main course. I was so pleased to find this recipe on YouTube because my husband had invited his boss over for dinner and the boss loves potatoes. I had already cooked potatoes in every way imaginable for him and just when I thought I had explored every option for potato ideas I was reminded of these delicious cottage fries. They are so easy and great if you need an attractive side dish in a pinch. All you have to do is cut your potatoes in circles, season them as you like with a little oil or clarified butter, and lay them on a baking sheet with a bit of parchment paper or just a light greasing of the pan surface. Then, bake them in the oven and you have delicious cottage fries in about 30 minutes. I had the grill fired up and had lightly marinated my steaks I was serving. With this recipe for cottage fries, I had all bases covered and the whole meal was going to be ready at the same time, which is great because when you are trying to cook for someone you need to impress, you can’t have any mishaps caused by overcomplicated recipes.
First, cut your potatoes into circles then rinse and dry well.
Then season the potatoes with salt, pepper, and herbs then, coat lightly with oil.
Then bake in a 350-degree oven till golden brown.
Everyone loved these cottage fries, they were a big hit with my husband’s boss.
