Who doesn’t love salmon? This fish is the tastiest among others, in my opinion. It’s rich, easy to cook, and super healthy. So if you love salmon like me, I highly recommend this salmon and vegies recipe from Kevin Lee Jacobs on Youtube. It’s a one-pan dinner recipe – perfect if you’re in a hurry. Preheat the oven to 425 degrees F and line a baking pan with aluminum foil. Next, prepare the veggies. Cut 2 – 3 small broccoli crowns, chopped 2 – 3 bell peppers, and slice 1 medium red onion. Spread the veggies all over the lined baking sheet, then drizzle some extra virgin olive oil. Toss the veggies lightly, then place them in a preheated oven of 425 degrees F and set your timer for 15 minutes. For the marinade, in a bowl, add 1/3 cup of soy sauce, and 1 tbsp of cornstarch. Whisk it well. Whisk in 3 tbsp rice vinegar and 3 tbsp of olive oil. Add 1 tbsp sambal oelek (chili paste) for a little heat.

Grab your salmon fillets and put them in the marinade bowl. Coat them with the marinade and make sure that both sides are well-coated. Let it sit while the veggies are cooking. After the veggies are cooked, place the salmon over the top, then take the marinade and drizzle it over all of the veggies. Place it in the oven and cook it for exactly 10 minutes.
