Easy One Pan Greek Lemon Chicken and Potatoes Ingredients

  • 2 1/2 – 3 lbs of chicken thighs and drumsticks (bone-in, skin on)
  • 1 1/2 lb of potatoes (peeled and cubed)

For the seasonings:

  • 2 teaspoons of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 2 tablespoons of dried oregano
  • 1 teaspoon of ground cumin
  • 1/4 teaspoon of crushed red pepper flakes

For the marinade:

  • 1/3 cup of olive oil
  • 1/4 cup of fresh lemon juice
  • 1/4 cup of water
  • 2 to 3 garlic cloves (grated)

Optional seasonings:

  • 1 teaspoon of paprika
  • 1 teaspoon of ground sumac
  • fresh parsley (for garnish)

 

How to Make Lemon Chicken and Potatoes

Step 1:

In a small bowl, combine all the spices and mix them together.

Step 2:

In a different bowl, combine all the marinade ingredients and whisk them together.

Step 3:

Wash the chicken and pat them dry. Place them in a baking pan or tray together with the potatoes.

Step 4:

Pour the marinade over the chicken and potatoes, then sprinkle the spices. Toss everything together. Add 1/4 cup of water in the pan.

Note: you can marinate the chicken (do not include potatoes as they will turn brown) for 24 hours before roasting, just place in the refrigerator. Make sure that it comes to room temperature before roasting.

Step 5:

Place in a preheated 425F oven and bake for 45 minutes to an hour until the chicken is fully cooked and the potatoes is tender. At the end, you can raise the temperature a little bit, so you can get a nice color.

Step 6:

Garnish with parsley on top.
