Ingredients:

Cake recipe

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 2 whole eggs
  • 3 teaspoons vanilla
  • 2 cups cake flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup milk

Pineapple glaze

  • 32 ounces crushed pineapple, including juice
  • 4 ounces butter
  • 1 cup granulated sugar
  • 1 tablespoons vanilla
  • 2 tablespoons cornstarch

Directions:

Step 1

In a mixing bowl of a stand mixer, beat together the butter and sugar for about 10 minutes over a high-speed setting until creamy and well combined. Add the eggs gradually and vanilla, then continue beating them together until all the eggs are incorporated. In a separate mixing bowl, mix the flour, salt, and baking powder until well combined. Add this dry mixture into the wet mixture alternately with milk, then beat together until the batter becomes smooth making sure not to overmix. Grease and flour two 9 inches cake pans, then divide and pour the batter in them evenly. Pop it in the preheated oven, and let it bake at 350 degrees for about 30 to 35 minutes.

Step 2

While waiting for the cake to bake, prepare the pineapple glaze. Place a saucepan on a stove over medium-high heat, then add the butter, sugar, and vanilla. Bring it to a boil while stirring consistently, then add the slurry, or cornstarch and water mixture, stir it until well combined, and let it cook for 5 more minutes until the glaze thickens. Remove it from heat and set it aside. After baking the cake, remove it from the oven and let it cool for about 10 minutes. Unmold the cake layers, then lay 1 layer of cake, spread some glaze on top, place the other layer of cake right on top of the glaze, and pour the remaining hot glaze all over the cake. Serve and enjoy!
