Ingredients:

  • 1 & 1/2 cups digestive biscuit crumbs
  • 1/4 cup unsalted butter

The filling:

  • 16 oz full-fat cream cheese
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • 1/2 cup whipping cream

Topping:

  • sweetened whipped cream

Directions:

Step 1

Add 1 & 1/2 cups of biscuit crumbs to a bowl followed by 1/4 cup melted butter. Mix well, then add the crumbs to a 7″ springform pan. Push it to the bottom tightly and freeze for 30 minutes. Next, add 16 oz full-fat cream cheese in a bowl and whisk it until fluffy.  After this, add 1/2 cup powdered sugar and 2 tsp vanilla extract and continue to whisk until combined. Set aside.

Step 2

In another bowl, add 1/2 cup of whipping cream and whisk until stiff peaks, then add it to the cream cheese mixture. Fold the mixture gently and pour it into the prepared base. Spread the mixture evenly, then chill in the coldest part of the fridge for eight hours or until fully set.
