Ingredients:

  • 12 oz uncooked dried spaghetti
  • 4 cups cooked boneless, skinless chicken (chopped into bite-size pieces)
  • 2 (10.5 oz) cans cream of chicken soup
  • 16 oz sour cream
  • 1 (10 oz) package of frozen spinach (thawed, chopped, drained)
  • 16 oz shredded Monterey Jack cheese (divided)
  • 2 cloves of garlic, minced
  • 1/4 tsp ground black pepper
  • 1 (6 oz) can of French’s Fried Onions
  • 1/4 cup diced roasted red bell peppers (drained)

Directions:

Step 1

Preheat your oven to 350 degrees F and grease a 9 x 13 baking dish with nonstick cooking spray. Set it aside. Next, cook your spaghetti noodles according to its package instructions. In the meantime, chop your cooked chicken into smaller pieces and transfer them to a large mixing bowl. To the cooked chicken, add two cans of cream chicken soup, 16 oz of sour cream, and 8 oz of shredded Monterey Jack cheese. Mix them all well together.

Step 2

Now, add the chicken mixture to the pot of drained spaghetti. Add 1/4 cup diced roasted red bell peppers, two cloves of minced garlic, 10 oz of chopped and thawed frozen spinach, and 1/4 tsp ground black pepper. Mix all well together. After this, transfer the mixture to the greased baking dish and top it with the rest of the shredded Monterey Jack cheese and one can of French Fried Onions. Place the casserole in the preheated 350 degrees F oven and bake for 40 to 50 minutes uncovered. After baking, let it rest for about ten minutes, then serve.
