So I think I just found my favorite recipe of 2019, and I am a little embarrassed to admit how easy it is to make since everyone who knows me knows 1) I love to cook 2) I often spend hours in the kitchen. Perhaps it is because it is Christmastime and I have so many other things to do than spend all day in the kitchen or maybe it is because it is cold and I’d rather be under a blanket watching TV, but my go-to dinner recipe right now is a chicken and dumplings recipe for the ultimate in quick comfort foods. A simple mix of veggies and a can of pop tube biscuits transform into a thick soup in minutes when you use the instant pot for making quick homemade chicken and dumplings.
Learn how to make chicken and dumplings in an instant pot in 20 minutes with just a few ingredients, with canned biscuits for the dumplings. May sound a little odd, but dumplings are supposed to stay fluffy inside, and the instant pot actually steams them perfectly. Thanks to the saute feature on the instant pot, the veggies get sauteed in just a few minutes, then you add the rest of your ingredients, set and then just stir in another two ingredients after your instant pot timer goes off. Sound easy enough? It is. Even my 12 year old son loves making this one, I think even if you don’t cook much at all you can easily pull this one off. Then, for you who love to cook like me, I promise, this recipe will not dissapoint, especially when you realize how much time you saved. Add your own homemade biscuits to the top instead of canned, if you insist, either way, this country cooking recipe is super yummy. 1 medium white onion
4 medium carrots, peeled and diced
3 ribs celery, diced
1 T vegetable oil
1 pound of chicken tenders, chopped
1/2 t salt
1/2 t pepper
1 t thyme
1/2 cup flour
1 tube of canned biscuits, cut into quarters
4 cups chicken broth
1/2 cup heavy cream (or 1 can cream of mushroom soup may be substituted)
1 cup green peas
Prep and chop your veggies. Cut the chicken tenders into bite-sized pieces.
Add veggies to instant pot with oil. Saute for 2 minutes using saute function. Add chicken. Saute for another 2 minutes.
Add flour to top, then stir. Add 1/2 cup chicken broth, stir. Add the rest of the chicken broth, salt, pepper and thyme. Stir.
Place biscuits on top of this, then set instant pot for 8 minutes. Wait for natural steam release (about 10 minutes) and then your chicken and dumplings are just about ready/
Stir in peas and cream (or soup if you prefer. Serve and enjoy.
Yes, this one is that easy! I love my days where I spend hours in the kitchen but I also love simple recipes when they are actually good, so this one is a keeper for me. Try it out in that instant pot of yours and see what you think.
