There are two types of cherries – sweet and tart. The most popular ones are called the Bing cherries. They are heart-shaped and crisp.
A good rule of thumb for selecting cherries is that the darker the color, the sweeter the taste. Also, check the stems; they should be bright green. Choose the ones that are firm and plump and have shiny skins.

If you are wondering if all cherries have pits, the answer is yes. You won’t find seedless cherries in any market. But do not worry! Removing the pit of cherries is actually easy. Get a paper clip and bend it open so it lays flat.
Take your cherry and push one end of the paper clip on the top center of the cherry. It should be on the stem end.
Gently rotate it a little bit, then pop the pit right out. Repeat the steps with the remaining cherries. To avoid getting stains on your fingers, wear gloves. Lay a plastic in front of you to avoid staining your countertop or wooden table.
