Preheat the oven to 350 degrees F. Using a cooking spray, grease a 9″ springform pan. Peel and dice peaches into 1/2″ thick pieces.
Whisk 1 1/2 cups flour, 1 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt into a small bowl.
Beat 12 tablespoons of butter with 1 cup of sugar on high speed for 4 to 5 minutes or until fluffy in a large bowl. Beat in 3 large eggs, one at a time to allow them to incorporate into the batter. After the eggs, beat another minute on medium or high speed, then add 1/2 teaspoon of lemon zest and 1/2 teaspoon of vanilla extract.
Put the mixer on low speed, beat in flour 1/3 at a time, and mix until well combined. Gently fold the peaches until well incorporated, then pour the batter into the pan. Smoothen the top. Place in the preheated oven and bake for 50 minutes to 1 hour. Once done, let it cool in the pan for 10 minutes, then loosen the cake from the pan using a spatula around the edges. Allow the cake to cool to room temperature. Dust the cake with powdered sugar and decorate with the peach slices in a ring around the center of the cake.
