Cheesecake is not something that’s on my top list for desserts, but this specific recipe caught my eye. This no-bake chocolate cheesecake recipe does not require an oven, and it’s rich and decadent. Just by the look of the chocolate cheesecake, I was stunned how the filling looks moist and spongey. Everything about this recipe screams chocolate which I love. This recipe looks impressive, and I think it would change my mind about cheesecake. My favorite part of this chocolate cheesecake would be the Oreo crust. I love the crust on about anything, so I can find myself going for more than one slice. I think it would be great to serve with a glass of almond milk because it might be too indulgent for me.
First, place the Oreo cookies in a food processor and process until they’re crumbs. Mix the Oreo crumbs and melted butter together until well combined. Pour the mixture into a lined cake tin and use a spoon to evenly pack the crust onto the bottom. Keep the cheesecake crust in the fridge to set.
Next, cut the chocolate into small pieces and place in a heatproof bowl. Pour the heavy cream in a medium-sized mixing bowl and beat with a whisk until softly whipped. Pour the softly whipped cream and cooled melted chocolate into a bowl with the cream cheese and sugar.
Stir all of the ingredients together for the chocolate cheesecake mixture and pour it into the cake tin. Place it back into the fridge to firm. The chocolate ganache on top of the chocolate cheesecake completes the recipe and looks so smooth. This cake reminds me of a chocolate mousse.
