Ingredients:

  • 2 (15-ounce) cans of fire-roasted tomatoes or use 4 cups of chopped fresh tomatoes
  • 1/3 cup of chopped white or sweet onion
  • 2 medium cloves of garlic or 2 teaspoons minced
  • 1 to 2 medium jalapeño or serrano peppers, with stems, membrane and seeds removed
  • 1 cup of chopped fresh cilantro
  • 1 to 2 medium limes
  • ½ teaspoon of fine sea salt, plus more to taste

Directions:

Step 1

Place a strainer over a large bowl, then pour the tomatoes on it, and allow it to drain off all the juices. Save the drained juice and use it later for the salsa if it’s too thick or you can save it for any dish or soup that you want to cook later. Chop the onion and add it to a medium-sized mixing bowl, then pour cold water over it. Set it aside and let it sit for about 10 minutes, then drain off the water, and give it a good rinse.

Step 2

In a blender or food processor, then add the garlic, and pulse it until chopped into small pieces. Scrape the sides before adding in the drained tomatoes, then add the drained and rinsed onions followed by peppers, cilantro, ¼ teaspoon of salt, and the juice of half a lime. Pulse and mix them all together until the desired consistency and texture. Taste and adjust the season with about ¾ teaspoon of salt or more lime juice. You can put it in the refrigerator for about 30 minutes or more before serving.
