Ingredients:

  • 3.5 oz of dark chocolate (70%)
  • 3.5 tablespoons of unsalted butter
  • 8 tablespoons of sugar (divided)
  • 1/3 cup of milk
  • 3 egg yolks
  • 1/4 cup of cocoa powder
  • 1/4 cup of cake flour
  • 3 egg whites
  • 0.2 teaspoons of lemon juice
  • salt

Instructions:

Step 1:

Slice the dark chocolates into small pieces and place them in a bowl. Add 3.5 tablespoons of unsalted butter and 4 tablespoons of sugar. Place over boiling water and stir until melted and smooth.

Step 2:

Add 1/3 cup of milk to the chocolate mixture and stir until well incorporated.

Step 3:

In a different bowl, crack 3 eggs. Scoop the egg yolks using your hands and transfer them to the chocolate and milk mixture. Set aside the egg whites for later. Mix until well combined. Next, add the cocoa powder and stir until there are no lumps.

Step 4:

Add the lemon juice and a little salt to the egg whites. Gradually add 4 tablespoons of sugar while whisking. Continue to whisk until soft peak.

Step 5:

Add the egg whites into the chocolate mixture gradually and fold after every addition.

Step 6:

Pour the mixture into a round mold with parchment paper. Place it inside the oven and bake at 356 degrees Fahrenheit for about 25 to 30 minutes.

Step 7:

Turn it upside done and let it cool. Once cooled, remove from the mold and take off the baking paper. Press it lightly on top and sprinkle with sea flakes on top. Slice then serve. Enjoy!
