Step 1
Cut the chicken breasts into cubes, then put them in a large mixing bowl, and add the salt, black pepper, paprika, and olive oil. Mix them all together until the chicken is evenly seasoned, then let it rest and marinate for about 15 minutes while preparing the rest of the ingredients. Chop the onions and vegetables, then divide the white onion into two, and set them all aside. Place a large pan on a stove over medium-high heat, then fry the red and white onions for about a minute before adding the tomato paste followed by hot water and salt. Give them a good stir, then bring them to a simmer for about 3 to 4 minutes. Give the chicken another mix, then let it simmer for another 5 minutes, garnish it with some fresh dill, cover, and turn off the heat.

Add some vegetable oil to a separate pan, then start frying the marinated chicken for about 3 to 4 minutes, then pour the cooked onion and tomato mixture on top of the chicken, cover, and let them simmer for about 3 to 4 minutes. Cook the rice at this point, then place a separate pan on the stove, and heat up a bit of vegetable oil. Add the remaining portion of white onions and saute them until tender, and add the chopped carrots. Toss and fry them for 3 minutes, then add the chopped bell pepper, and fry them for 2 minutes. Add the corn and some salt, then toss them together to combine, and add the cooked rice, mix them together until well combined. Serve the chicken together with the stir-fried rice and enjoy!
