Start by preheating your oven to 350F and lightly spraying a 9″ x 13″ pan with nonstick cooking spray.
Place a large nonstick pan over heat and drizzle olive oil. Add onions, mushrooms, and a pinch of salt and sauté for 6 to 8 minutes or until the onions are translucent and the mushrooms are lightly browned.
Add the spinach, then turn off the heat. Mix until well combined and the spinach is slightly wilted.
Transfer to the prepared baking pan and spread on the bottom evenly. Sprinkle crumbled feta cheese on top, then set aside.
In a large bowl, whisk eggs, cottage cheese, garlic powder, onion powder, salt, and pepper.
