  • 1 teaspoon of olive oil
  • 1 small onion (chopped)
  • 8 ounces of cremini mushrooms (sliced)
  • 5 cups of baby spinach (roughly chopped)
  • 12 eggs
  • 1 1/2 cups of low-fat cottage cheese
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 ounces of feta cheese (crumbled)

How to Make Healthy Egg Bake

Step 1:

Start by preheating your oven to 350F and lightly spraying a 9″ x 13″ pan with nonstick cooking spray.

Step 2:

Place a large nonstick pan over heat and drizzle olive oil. Add onions, mushrooms, and a pinch of salt and sauté for 6 to 8 minutes or until the onions are translucent and the mushrooms are lightly browned.

Step 3:

Add the spinach, then turn off the heat. Mix until well combined and the spinach is slightly wilted.

Step 4:

Transfer to the prepared baking pan and spread on the bottom evenly. Sprinkle crumbled feta cheese on top, then set aside.
