What I love most about this recipe is that you can customize it however you like. You can add your favorite toppings like veggies, ham, sausage, or any kind of meat you prefer. When making the mixture, be sure not to add too much salt, as the bacon and cheese are already salty. You will be using two different kinds of cheese for this recipe – Swiss cheese and cottage cheese. Do not skip or substitute the cottage cheese, as it will make them light and fluffy just like Starbucks.

Line a baking sheet with aluminum foil and place a rack on top. Lay the bacon slices flat, then place in a 400F oven and bake for about 15 – 18 minutes until crispy. Once done, chop into bite-sized pieces.
Evenly divide the bacon bits into the 7 cups of mold.
In a blender, add the eggs, salt, pepper, cottage cheese, and Swiss cheese. Blend until well combined.
Fill each mold with the mixture about 3/4 full. Cover the mold with foil.
Add 1 1/2 cups of cold water to your instant pot and place the inner rack. Put the egg bites on top of the rack. Place the lid and make sure the vent knob is pointed towards sealed. Press manual or pressure cook and and adjust until it reaches nine. Once the cooking time has elapsed, don’t do anything. Let pressure release on its own for at least 10 minutes, then you can open it.
Using potholders, remove the egg bites from the instant pot. Take off the foil and let it set for a minute or two. They will easily invert out onto a plate.
