This Halloween mummy meatloaf by Twisted on YouTube looks so good and creative. It’s a simple recipe, and it would make such a good table dish if you’re having a Halloween potluck or party. Meatloaf is one of those dishes that not a lot of people really have, but I like the idea of it being shaped like a mummy. It’s a great way to make food look fun and a cool idea for those that are trying to have food for Halloween. I love how golden the puff pastry turned out wrapped around the meatloaf. Plus, I think it would be super tasty if it was wrapped around bacon too, which I think would keep the meatloaf super moist.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, minced
  • 1 garlic clove, crushed
  • 1 cup beef stock
  • 1 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tbsp white wine vinegar
  • 1.8 lbs of ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup parmesan cheese
  • 1 tbsp salt
  • 2 eggs
  • 2 sheets of puff pastry (or make homemade)
  • 2 olives

Directions:

First, in a large heated pan with olive oil, saute the minced onions. Then, pour in the beef stock, ketchup, brown sugar, cayenne pepper, black pepper, and white wine vinegar, Mix everything, and pour the sauce into a bowl with the ground beef. Next, once the ground beef is and puff pastry is crisscrossed and layered into a mummy, add the olives for the eyes. Then, brush an egg wash all over the puff pastry. Bake for 50 minutes at 360F.
