Quarantine cooking simply means using ingredients you already have such as canned beans and meat you may already have in the freezer. This recipe for Gains Family Chili utilizes those simple ingredient ideas and provides a wholesome filling meal that the entire family can enjoy without any overly complicated cooking instructions, hard to find ingredients or long strenuous preparation time. You start by sauteing your onion, garlic, and ground beef in a large pot or dutch oven then add your beans and simmer for a couple of hours. In this wonderful video, I found on Youtube by Joanna Gains, she talks about the many challenges of quarantine and engages in a lively question and answer session with her lovely daughter Ella which is very enlightening because she describes many things about herself such as how she stocks her pantry to her favorite ways to spend time during the quarantine time. Joanna serves her chili with Fritos and cornbread, which is optional but does go beautifully with the recipe if you have any of those ingredients in your pantry.

Ingredients:

  • 1 pound of ground beef or ground chuck
  • 2 (26 ounce) cans of  Ranch Style Beans (you can use whatever beans you have Kidney or Pinto Beans would work as well)
  • 1 Onion
  • 1 can of Stewed Tomatoes
  • Salt and pepper to taste
  • 1 teaspoon of Garlic Powder
  • Fritos Corn Chips (or tortilla chips to serve with the chili, these are optional)
  • Cornbread (made from scratch or from a package to serve with the chili, also optional)
  • Grated Cheese (also optional)

Directions:

First Joanna sautees her onion and ground beef, then adds her Ranch Style Beans, salt, pepper, and garlic powder lets the chili simmer for 2 hours.

Then she serves the delicious chili over Fritos Corn Chips, Yum!
