Ingredients:

For the Cake:

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 cup unsweetened dark cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups hot water
  • 1/2 cup hot coffee
  • 3/4 cup vegetable oil
  • 2 tbsp white vinegar
  • 1 tsp vanilla extract

For the Frosting:

  • 1/2 cup unsalted butter
  • 1/2 cup vegetable shortening
  • 1 – 7 oz jar marshmallow cream
  • 3 cups powdered sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 – 2 tbsp heavy whipping cream
  • 10 crushed Oreos

Directions:

Step 1

Preheat your oven to 350 degrees F, then grease two 8″ round cake pan with some butter and line the bottom with parchment paper. Next, combine 3 cups of all-purpose flour, 2 cups of granulated sugar, 1/2 cup unsweetened dark cocoa powder, 2 tsp baking soda, and 1 tsp salt in a large mixing bowl. Whisk together to combine. In another bowl, add 1 1/2 cups hot water, 1/2 cup hot coffee, 3/4 cup vegetable oil, 2 tbsp white vinegar, and 1 tsp vanilla extract. Whisk together to combine, then gradually pour it into the dry mixture while whisking continuously.

Step 2

Divide the batter into the prepared cake pans and place them in the preheated oven. Bake for 34 – 38 minutes. After baking, remove from the oven and let the cakes cool completely before removing from the pans. In the meantime, make the frosting. Add 1/2 cup unsalted butter and 1/2 cup vegetable shortening in a large mixing bowl and cream together using an electric mixer. Next, add 1 jar of marshmallow cream, and continue to mix. After this, gradually add 3 cups of powdered sugar, and once incorporated, add 1 tsp vanilla extract and 2 tbsp heavy whipping cream. Continue mixing until smooth and fluffy.

Step 3

Spread half of the frosting over one of the cakes, then sprinkle some crushed Oreo. Add the other cake on top, then cover the entire cake with the remaining frosting. Coat with some more crushed Oreo and serve. Enjoy!
