Ingredients:

  • ½ red onion
  • 1 seedless cucumber
  • 12 ounces of cherry or grape tomatoes, preferably on the vine
  • ½ lemon, juiced
  • 12 leaves of fresh basil
  • 5 sprigs of fresh thyme
  • ½ tablespoon of red wine vinegar
  • ¼ cup of extra virgin olive oil
  • ¼ teaspoon of crushed red pepper flakes
  • 1 teaspoon of dijon mustard
  • Salt, to taste
  • Pepper, to taste

Directions:

Step 1

Slice the tomatoes or grapes in half, then put them in a medium-sized mixing bowl. Using a sharp knife, start cutting the cucumber. Start by removing the ends, then slice them into medium-sized discs, and each disc into quarters. It might be easier to stack them together in batches, and then cut them all at once. Add the sliced cucumbers into the bowl where the tomatoes or grapes are. Peel off the outer skin of the red onion, remove the core, and slice the onion as thin as possible. Stack about 4 to 5 leaves of basil, then roll them together tightly and slice them into thin strips. Continue working on the other basil leaves until you’ve cut them all. Remove the thyme leaves using your fingertips and mince them finely.

Step 2

In a small mixing bowl, mix together the lemon juice, red wine vinegar, olive oil, dijon mustard, salt, pepper, and crushed red pepper flakes. Whisk them all together vigorously for several minutes until the vinaigrette has thickened. Add the thyme leaves to the mixture, then give it a quick whisk. Combine the cucumber, tomato or grapes, onion, and basil into a large mixing bowl, then pour over some of the vinaigrette or to taste, and gently toss them around until well combined. Taste and adjust the seasoning as needed. Put it in the fridge to cool or serve it right away.
