Ingredients:

  • 2 cups of all-purpose flour
  • 1 tsp of salt
  • 1 tsp of baking powder
  • ¼ tsp of baking soda
  • 1½ cups + 2 tbsp of granulated sugar, divided
  • 3 large eggs, at room temperature
  • 1 cup of extra-virgin olive oil
  • 1¼ cups of whole milk
  • 1 tbsp of fresh lemon zest
  • 2 tbsp of fresh lemon juice

Directions:

Step 1

Preheat your oven to375°F, then lightly grease a round cake pan with oil, and line the bottom with parchment paper. Dust the pan with flour and set it aside while preparing the cake batter. In a medium-sized mixing bowl, add the flour, salt, baking powder, and baking soda, then whisk them all together until well combined and uniform, and set it aside. In the mixing bowl of a stand mixer, add the sugar and eggs, then beat them together over high speed for about 1 minute or until light and fluffy, and then change the speed setting to low.

Now, gradually pour the olive oil while continuously beating, then add the milk, lemon zest, and lemon juice, and continue to beat until well combined and incorporated. Add the flour mixture gradually, then beat until combined, and pour the batter into the prepared pan spreading it nicely and evenly. Sprinkle the remaining 2 tablespoons of sugar, then put it inside the preheated oven, and let it bake for about 40 to 45 minutes or until a toothpick inserted in the center comes out clean. Once done baking, transfer the cake while still in the pan on a wire rack to cool down for about 20 minutes, then unmold the cake, and peel off the parchment paper. Let the cake cool down completely, then serve, and enjoy!
